Fan Pan Mozzarella Spinach Chicken

Fan Pan Mozzarella Spinach Chicken is a Family favorite, most chicken, melted cheese, wonderful flavors.  A Fan Pan must try!

Ingredients for baking:

2 Chicken breasts
1 Cup spinach leaves, stems removed
1 Cup cherry tomatoes, halved
16 slices of Mozzarella cheese, cut into 1” x 2” x ¼” pieces
Italian season to taste

Instructions for baking:

1.     Preheat oven to 350 degrees
2.     Cut chicken breasts ¾ of the way through about every inch for a total of 8 cuts
3.     Place chicken on Fan Pan and fan chicken out
4.     Stuff each cut with a few pieces of spinach followed by a piece of the cheese and a couple of tomato slices
5.     Sprinkle with Italian seasoning to taste
6.     Bake for about 25 to 30 minutes until chicken is cooked through, (165 degrees at thickest point)

7.     Using spatula, remove chicken from fan pan and place onto serving dish and enjoy


Loaded Hasselback Potato




















Basic and Loaded Fan Pan Hasselback Potatoes

Ingredients for baking:

2 large baking potatoes (or multiple smaller potatoes as pictured below)
1 tablespoon olive oil
2 tablespoons parmesan cheese
Salt
Pepper

Instructions for baking:

1.     Preheat oven to 400 degrees
2.     Place chop sticks on both sides of cleaned potatoes
3.     Starting at the center of the potato, slice the potato down to the chop sticks in ¼ slices working your way to both edges, making sure not to slice all the way through the potato
4.     Gently set the potato onto the fan pan, which is place on a baking sheet or other pan
5.     Gently fan the potato out on the fan pan, making sure not to break the potato
6.     Brush the potato with some of the olive oil, cover with foil and place into the oven for about 50 minutes
7.     After 50 minutes, remove foil, lightly brush with additional olive oil and add salt and pepper to taste, sprinkle with parmesan cheese, bake an additional 10 minutes
8.     Using spatula, remove potatoes from fan pan and place onto serving dish, top with your favorite toppings or just enjoy as is.
