FAN PAN JALAPEÑO POPPER CHICKEN



FAN PAN JALAPEÑO POPPER CHICKEN!!!

INGREDIENTS
4  
skinless boneless chicken breasts

Kosher salt

Freshly cracked black pepper
6 oz. 
cream cheese, softened
1/2 c. 
shredded mozzarella
1/2 c. 
shredded cheddar
2  
cloves garlic, minced
4  
slices bacon, cut into 2" strips
3  
jalapeños, thinly sliced

DIRECTIONS
  1. Preheat oven to 400º. Make 5 slits in each breast, being careful not to cut through completely. Transfer to a small baking sheet and season all over with salt and pepper.
  2. In a medium bowl, stir together cream cheese, mozzarella, cheddar, and garlic. Season with salt and pepper. 
  3. Stuff each chicken breast with bacon, sliced jalapeños, and cream cheese mixture. Bake until bacon is crisp and chicken is cooked through and no longer pink, about 25 minutes.
  4. An absolute fantastic dish!!

The Original Fan Pan Potato

The Fan Pan Potato is the reason the fan pan exists, interesting, fun and delicious, it has become a regular at our home.  Pictured here with the fantastic "Alice Springs Chicken" but sometime we just eat them as a meal on their own.



4 (or more) baking potatoes
Sour Cream
Green Onions
Whatever else your heart desires for toppings

Place chop sticks on either side of the potato, starting in the middle cut potato in 1/4 inch slices or thinner working your way from the middle of the potato to each end letting your knife stop at the chop sticks so potato is not sliced through.

Put the Potatoes on the Fan Pan, cover with foil and bake at 400 degrees for 45 Mins, remove foil, spray with Olive Oil, sprinkle with salt and pepper and return to oven for 20 Mins, remove from oven put onto plate and top with your favorite potato toppings and ENJOY.  

Hasselback Caprese Chicken

Using the fan pan, this protein rich delicious chicken is packed with gooey flavor, a favorite for sure!




4 Boneless, skinless chicken breasts
Salt and pepper to taste
2 sliced medium tomatoes
6 oz fresh mozzarella, sliced
1/2 cup prepared pesto

  1. 1. Preheat oven to 375°F and set fan pan on baking sheet
  2. 2. Make crosswise cuts every ½ inch along both chicken breasts, slicing almost to the bottom but not all the way through. Sprinkle chicken with ¼ teaspoon each salt and pepper. Fill the fanned out cuts on the fan pan alternately with tomato and mozzarella slices. Brush with pesto. 
  3. 3. Bake until the chicken is no longer pink in the center and the broccoli is tender, about 25 minutes. Cut each breast in half and serve with the broccoli.

Fan Pan Sweet potatoes with creamy honey Dijon dressing
Ingredients for baking:

4 medium sweet potatoes
Spray on Olive Oil
3 tbls Olive Oil
1 tbls Italian Seasoning
½ tbls Pepper Flakes
½ cup Mayonayse
¼ cup Honey
¼ cup Dijon Mustard

Instructions for baking:

1.    Preheat oven to 400 degrees
2.    Cut the potatoes, beginning in the middle, using chop sticks as a guide, in 1/4 inch cuts
3.    Place Potatoes on fan pan, spray with olive oil, cover in foil and bake for 60 minutes
4.    Remove foil, lightly baste with mixture of Olive oil, Italian Season and Pepper Flakes
5.    Bake, uncovered, for an additional 25 minutes

6.    Remove potatoes from Fan Pan, place on serving dish and drizzle with mixture of Mayo, Honey and Mustard, Enjoy.

Fan Pan French Fry Bites



Fan Pan French Fry Bites

Ingredients for baking:

3 medium baking Potatoes
Spray on Olive oil
Salt
Pepper
¼ cup shredded parmesan cheese

Instructions for baking:

1.     Preheat oven to 400 degrees
2.     Slice potatoes, using the chop stick method, starting from the middle to the outside, cutting in ½ inch cuts, then turn potato and do the same across the initial cuts to form small square cuts all over potato (pictured below)
3.     Place potatos onto fan pan, spray with olive oil, cover with foil and bake for 45 minutes
4.     Remove foil, spray a little more olive oil onto potatoes
5.     Sprinkle with parmesan cheese and bake an additional 15 to 20 minutes
6.     Remove potatoes from Fan Pan and place on serving dish, serve with favorite dipping sauce and enjoy
